Big Thyme Personal Chef & Catering doesn't just teach individuals and private groups how to cook, we train your restaurant staff for you! Staff education classes include food safety, knife safety, precision knife cuts, how to achieve consistency in prep and execution, economy of movement, batch cooking, a la minute cooking, mise en place, proper kitchen communication for safety and expediting service, walk-in refrigerator and freezer order of operations, vendor order reception, FIFO order throwing, kitchen opening and closing systems for efficiency, as well as tips and tricks from a 15 year seasoned veteran.
Would you like to learn the spirit of a cuisine, and the building blocks that comprise it? Chef Daniel has a deep repertoire in Italian, Mexican, Mediterranean, Cajun, and American Southern Comfort food and teaches culinary classes to the public that capture the essence of these cuisines. This class is a 4-6 hour commitment and recommended for confident home cooks who need little help with knife handling and food safety but want to learn something new or more advanced.
If there is a dish that is special to you that you would like to learn how to execute masterfully, chef Daniel is the perfect person to put it in your repertoire. You'll learn how to select the best ingredients, prep them with expert technique, cook them to perfection, assemble a beautiful presentation, and keep your kitchen clean as you go! This class is a 2-4 hour commitment. Does not include precision knife training or food safety training outside of what pertains to this dish.
Are you a home cook with a passion for food, but sometimes fall short of your goals in execution? Working with chef Daniel for one day will have you moving and communicating like a classically trained chef in your own kitchen. You will learn which knife to use for the job, knife safety, precision knife cuts, food safety - especially how it manifests most often in home kitchens, clear communication when working with other people around you, how to clean as you go, "mise en place", and of course, how to cook a dish of your choice. This class is a 4-6 hour commitment and is meant to be transformative in your capacity to work with food and in a kitchen. Recommended for beginners and self taught home cooks.
Big Thyme's cooking classes can be adapted for children! We will use "safety knives" that can cut through some products but not human skin, to learn how to hold and use a knife properly. We will cover food safety, equipment safety, how to clean as we go, how to read recipes, and we will execute a simple recipe together. One class with chef Daniel and your kiddo will be on their way to Masterchef JR, or just on their way to make you lunch for a change! This class is a 2-4 hour commitment.
